While we have only had about an inch of snow so far this winter, we are in the middle of a cold snap here in the Northeast, with “freezing” being the high temperature of the day. Weather like this calls for hearty, hot dishes – like my family’s Beef Stew recipe. I’ve tried beef stew from a number of restaurants and recipes, and none can compare to this one (printable!).

I saved off the recipe for Chicken & Spinach noodles. Looks good for leftover chicken and using spinach before it wilts. Nice warm casserole on these cold days!
